This round pastry, in the form of a bicycle wheel, was created at the beginning of the XXth Century by Louis Durand, pâtissier of Maisons-Lafitte, to commemorate the Paris-Brest-Paris cycle race that was initiated in 1891. Its circular shape, its energizing high caloric value – and its irrisistible taste – made this a dessert a big success among the riders of this event (Source: Wikipedia).
